antimicrobial activity of plant extracts in traditional medicine on bacteria and fungi has been identified. medicinal plants have been used since ancient times as a food coloring and flavoring agents. also, plant extracts have been used for the prevention of diseases caused by food borne pathogens. with the use of active packaging that can interact with the environment and product, increased shelf life, safety and sensory properties of the product can be achieved and continued to maintain product quality. antimicrobial activity of medicinal plant extracts (including andrographis paniculata (burm.f.)wall. ex nees, curcuma zedoaria (christm.) roscoe, garcinia mangostana l, hibiscus sabdarifa l, musa sapientum l, nelumbo nucifera gaertn, piper betle l, psidium guajava l and punica granatum l) in tapioca starch - alginate based on edible films against food related bacteria (including 3 strains of escherichia coli, 2 strains of salmonella typhimurium, bacillus cereus, listeria monocytogenes, staphylococcus aureus, 1 strain of bacillus subtilis, vibrio parahaemolyticus, yersinia enterocolitica, and 2 strains of pseudomonas sp) was studied. according to research results, the most effective medicinal plant extracts were hibiscus sabdariffa linn and piper betle linn (antimicrobial activity of plant extracts). the most sensitive microorganisms to plant extracts were vibrio parahaemolyticus and yersinia enterocolitica. bacillus subtilis was the most resistant microorganisms. storage temperature was impressive on the antimicrobial activity of these films.
